So.... I decided to make soup tonight.... My thought process was leaning towards Sambar (Udipi style). I of course don't have the spices for that, but this wasn't bad at all.

Sharing with the neighbors since I'm pretty bad at cooking for one.


Ingredients
veggie oil
butter
2 med. onions
3 cloves of garlic
1 yellow squash
1 can petite diced tomatos
1 bag steam and serve mixed veggies
.5 bag of okra
1 cube mushroom stock
1 cube vegan vegetable stock
salt
pepper
ground cumin
half sharp paprika
Vindaloo Curry
.5 cup brown lentils.
2 bay leaves
Sriracha sauce

How it was assembled. Sort of. Assume that I multi-tasked and that I cut as I go, not ahead of time
Get the big soup pop
veggie oil + butter + 2 med onions + 3 cloves of garlic crushed
cook until the onions are translucent
add diced yellow squash
cook for a little bit longer

Add a can of petite diced recipe ready tomatoes
mix around.
add 1 bag of steam and serve mixed vegetables
add .5 bags of cut okra

take a cube of mushroom and a cube of vegan vegetable, mush them together. Add hot water from tea kettle just enough to make it liquid. pour into pot.

Add the rest of the water from the kettle.

Decide that adding lentils would be good.

.5 cup lentils, 1.25 cups water from the kettle again. add some cumin Boil for 5 minutes or so. Put in mini-food processor. Add to the soup pot.

add 2 bay leaves to the pot. Add some dried chives and dried celery. Add some Penzey's Vindaloo Curry. Add some salt. Add some .5 sharp paprika.

let it cook for a little while.

take some out of the pot. Add a generous twirl of Sriracha sauce. Eat.
